Chef Simon Song – Culinary Journey
During his childhood, Chef Simon Song spent much of his time around his grandfather’s successful Japanese restaurant, where he developed an early familiarity with and appreciation for Japanese cuisine. This environment fostered a natural curiosity and a strong desire to pursue culinary arts.
While working in the kitchen, he discovered a genuine passion for cooking, which led him to enroll at the Institute of Culinary Education. There, he was introduced to a broad spectrum of global cuisines, expanding both his technical skills and creative perspective.
Particularly inspired by French and Italian culinary techniques, Chef Simon Song sought to go beyond formal education by gaining hands-on experience in Michelin-starred restaurants as well as Asian fusion establishments. These diverse experiences allowed him to refine his craft and develop a well-rounded culinary identity.
He later worked under Chef James P., a renowned master of fusion Japanese cuisine, where he deepened his understanding of traditional Japanese techniques while cultivating a more innovative and modern approach.
Today, Chef Simon Song aims to move beyond conventional and standardized fusion Japanese dishes. At Blue Ocean UTC, he presents a distinctive and personal interpretation of fusion Japanese cuisine—one that reflects his unique vision and delivers a truly differentiated dining experience.
